FoodJet builds depositing solutions for industrial pizza lines that require controlled application of pumpable materials such as tomato sauce, cheese sauce and liquid toppings. Patterns and coverage can be adjusted via recipe settings, and hygienic valve technology supports consistent dispensing—depending on material behaviour and line conditions. This page shows an MDL example and typical considerations for high-volume pizza production.
Consistent pizza coverage at scale
FoodJet depositing solutions help pizza producers improve coverage consistency, reduce waste, and speed up recipe changeovers—for sauce, cheese, and toppings.
Typical outcome
- More consistent coverage across high-volume runs, depending on material behaviour and line conditions.
- Cleaner edges (configurable sauce-free border)
- Faster changeovers via recipe settings (no mechanical adjustment), depending on configuration and SOPs.
- Handles products with inclusions (subject to inclusion size and valve/nozzle configuration)
- Designed for pumpable liquids (not shredded cheese or solid vegetable pieces)
- Actual results depend on material properties, inclusion size, belt stability, and the selected valve/nozzle configuration.
Our pizza-making machinery in action
A large European pizza producer uses FoodJet’s Mobile Depositor Large (MDL) to apply sauce and cheese with software-defined patterns. Their previous setup struggled with the consistency of tomato sauce.
The MDL allows recipe-based adjustments (no mechanical changeovers) and can be configured with nozzles/valves suited for sauces with or without inclusions.

The MDL (Mobile Depositor Large) is designed for consistent depositing and clean edges on industrial pizza lines.
- Recipe-based settings can support faster changeovers, depending on configuration and operating procedure
- Integrates into existing conveyors and line layouts
- Suitable for high-volume operation (configuration dependent)
- Supports liquid sauce, cheese, and topping applications

No mechanical change-overs
With the FoodJet Control Platform, operators can select pre-defined recipes for different products, formats and coverage patterns. For the supported changeover parameters, adjustments are made in software rather than by mechanical reconfiguration of the depositing head. This enables fast product changeovers within the validated parameter range of your installation.
- How big should the sauce-free edge be
- How much sauce should be applied
- How the depositor should respond to off-spec products
- ... and much more
Large diameter nozzles
FoodJet pizza depositing setups are typically equipped with large-diameter pinch valves. This valve type is well-suited for pizza sauce and pumpable toppings with inclusions, because it is less sensitive to particles (depending on inclusion size and configuration).
With no moving parts in the product zone, the design supports easier cleaning and lower maintenance.
Engineering notes (integration & hygiene)
- Integration: before/after oven, retrofit options, conveyor width considerations
- Ingredients: sauce/cheese/toppings incl. inclusions (depending on inclusion size + valve/nozzle setup)
- Changeovers: recipe-based settings, no mechanical adjustment
- Hygiene: cleaning approach CIP-type
Materials (scope)
- Pumpable liquids: tomato sauce, cheese sauce, emulsions, oils, glazes
- Liquid toppings: e.g., honey, syrups (application dependent)
- Not in scope: shredded cheese and solid pieces (e.g., diced vegetables)
